Salt cod (or Bacalao as it is known in the Mediterranean), once a “staple food” of struggling New England pilgrims, is now considered a gourmet treasure. Countless five-star restaurants throughout the world proudly serve salted cod on their menus in a variety of preparations. Despite the fact that modern refrigeration can store fresh cod safely, salt cod’s unmistakable flavor is considered a connoisseur’s delight. Serve salt cod as your main course, top a bed of fresh greens with salted cod, create a wonderful stew with fresh vegetables, or serve it in true New England fashion in cod cakes.

When you order, you’ll receive a one-pound traditional wooden box filled with premium quality salted cod fillets
All salt cod needs to be refreshed in water for at least 24 hours before use. Change the water three or four times during the process. This removes the salt that has preserved the cod, leaving just a pleasant hint of saltiness for you to enjoy. Once the salted cod is refreshed, it should be cooked in liquid or poached. One of the most popular uses of salt cod is in codfish cakes. Poach the cod lightly by putting it in boiling water. Once the water has returned to a boil, remove the salted cod from the heat and let stand for ten minutes. Crumble the codfish and mix with potatoes, breadcrumbs, and spices, then fry the codfish cakes for a treat you won’t soon forget. Check our database for other delicious salted cod recipes. How to Store Salt cod can be stored for long periods of time in a cool, dry place in your refrigerator. Salt cod that is in the “refreshing” process can remain in the water for two to three days (in your refrigerator) provided the water is changed daily.
Our salt cod is boned, which means that, when filleted, every effort is made to remove all the bones. Occasionally however you may find a small pin bone in the cod. We at Gorton's Fresh Seafood, have used this product for many recipes, and have yet to find a bone, but we thought you should know about this.
