Ingredients:
8 oz Oysters, drained
2 Tbsp olive oil
1 clove garlic, minced
1 cup sour cream
1 Tbsp horseradish sauce
1 Tbsp chives, chopped
2 tsp lime juice
1 tsp lime zest
Blini ingredients:
1 cup self rising flour
1/2 cup wheat flour
1 tsp sugar
2 eggs, beaten
½ cup dark beer
½ cup skim milk
1 tsp lime juice
pepper to taste

Directions:
Prepare oysters:
1. Heat oil in skillet. Add garlic and oysters.
2. Sauté for 10-12 mintues until oysters are cooked through. Set aside.
3. In a small bowl, mix together the sour cream, horseradish sauce, chives, juice and zest. Refrigerate until ready to use.
Prepare Blinis:
1. In a large bowl, combine the flours and sugar making a well in the center.
2. Add the egg and gently stir incorporating some of the flour.
4. Slowly add the beer and milk stirring gently.
5. Stir in the juice and add the pepper.
6. Heat a non stick pan and brush with oil.
7. Place a tablespoon of the mixture for each blini. When bubbles are on surface, turn blinis and cook for 30 seconds or until browned.
8. Place on paper towel and keep warm until ready to use. (you can serve these cold too)
9.To serve, spread a heaping teaspoon of the cream mixture on each blini. Top with a oyster.
If desired, garnish with chopped chives.
