Ingredients:
2lbs Arctic Char or Salmon Fillets
¼ cup bourbon
¼ cup orange juice
2 Tbsp soy sauce
¼ cup brown sugar
¼ cup scallions, chopped
2 Tbsp fresh chives, chopped
2 Tbsp lemon juice
2 cloves garlic, minced
Directions:
1. Combine all ingredients except fillets in a large resealable plastic bag. Mix well.
2. Add fillets to bag. Marinate in refrigerator for 1-2 hours turning bag occasionally.
3. Place fillets on hot grill rack. Cook 5 mintues flesh side down. Turn fillet (skin side down) and cook another 5 mintues or until fish flakes easily with a fork. Baste frequently with reserved marinade.
