Stuffed Calamari

Stuffed CalamariIngredients:
2.5 lbs Calamari, thawed
¼ cup olive oil
1 medium onion, diced
2 garlic cloves, minced
1 pouch smoked tuna, (if using plain canned, drain tuna)
1 cup seasoned bread crumbs
½ cup feta cheese
¼ cup hazelnuts, chopped
2 eggs, slightly beaten
½ cup scallions, chopped
salt and pepper to taste

Directions:
1. In a small skillet heat olive oil. Add the onion and garlic and cook on medium heat for 3-4 minutes. Set aside.
2. In a large bowl, mix the tuna, breadcrumbs, cheese, hazelnuts eggs and scallions. Blend in the onion and garlic. Salt and pepper to taste. Mix well.
3. Refrigerate stuffing mixture until ready to stuff the calamari.

1 can chicken broth
2 Tbsp butter
1 Tbsp fresh parsley, chopped

Directions for stuffing squid bodies:
Fill calamari tubes with stuffing. Add tentacles to open end of each tube. Secure tentacles to tube with a toothpick.
Place stuffed calamari into oven proof casserole dish. Pour chicken broth over stuffed squid and
bake at 350°F for 15 minutes. Transfer calamari from pan to plate.
Blend butter into remaining broth. Reduce until thickened. Pour over calamari and sprinkle with parsley.
