Ingredients:
1 large Cod or Haddock fillet, cubed
1 lb Bay Scallops
1 lb large Shrimp, peeled & deveined
1 cup Crab or Lobstermeat
1 lb Littleneck Clams, cleaned
1 stick butter
1 onion, chopped
2 cloves garlic, minced
1 large can diced tomatoes
1 can chicken broth
1/2 cup water
1 cup white wine
1 bay leaf
2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp dried thyme
Directions:
1. In a dutch oven, melt butter over medium heat. Add onions and garlic stirring occasionally until the onions are soft.
2. Add tomatoes (with liquid), chicken broth, wine, bay leaf, basil, oregano and thyme. Cover and simmer for 20 mintues.
3. Stir in cod or haddock, scallops, shrimp, crab, and clams. Bring to a boil. Cover, reduce heat to simmer and cook for 7 minutes.
Notes:
Mussels can be added to this recipe.
