Ingredients:
1 lb Gorton's Uncooked Shrimp, peeled and deveined,tail removed
2 Tbsp olive oil
½ cup onion, diced
¼ cup green pepper, chopped
¼ cup red pepper, chopped
1 clove garlic, minced
2 tsp curry powder
¼ tsp crushed red pepper
1 can (13.5 oz) coconut milk
2 cans chicken broth (low salt if desired)
scallions, chopped
fresh parsley
Directions:
1.Sauté onion, peppers and garlic in oil in large saucepan.
2. Add curry powder, crushed red pepper, chicken broth, and coconut milk. Bring to a boil.
3. Reduce heat and simmer uncovered 20 minutes occasionally stirring.
4. Add shrimp. Cook approximately 5 minutes or until shrimp is pink.
5. Garnish with scallions.
Notes:
Shrimp can be chopped into smaller pieces if desired.
