Ingredients:
12 Littleneck Clams
2 Tbsp olive oil
3 Tbsp green pepper, diced
3 Tbsp red pepper, diced
1 stick butter
white cooking wine
2 strips cooked bacon-chopped
2 cloves garlic, minced
2 cups plain breadcrumbs
1 tsp black pepper
1 tsp oregano, dried
1 tsp parsley, fresh
paprika
fresh lemon, sliced
Directions:
1. Soak clams 15-20 minutes. Save clam juice and shells when shucking. Chop clam meat.
2. Saute peppers in olive oil for about 2 minutes.
3. Add a dash of white wine and continue to cook for 1-2 minutes.
4. Add butter, bacon and garlic.
5. Slowly stir in bread crumbs as butter melts. When mixture reaches the right consistency remove from heat. (be sure it is not too dry, use a little clam juice if necessary)
6. Sprinkle with pepper, oregano and parsley. Add chopped clams and mix well.
7. Stuff clam shells with mixture.
8. Sprinkle with paprika and bake at 350°F for 10 minutes.
9. Serve with fresh lemon slices.
