Ingredients:
8 Littleneck Clams
1 clove garlic, chopped
2 Tbsp olive oil
1/4 cup red pepper, chopped
1/2 stick salted butter, softened
1 Tbsp lemon juice
1 Tbsp white wine
salt
pepper
8 tsp Panko breadcrumbs
2 bacon strips uncooked, cut into 8 pieces
1 tbsp parsley, chopped, for garnish
Directions:
Casino Butter Preparation:
1. Saute garlic and red pepper in oil over medium heat for 3-5 minutes.
2. Remove from pan and place in medium mixing bowl. Add butter, lemon juice, and wine. Salt and pepper to taste. Mix until the consistency of a soft spread. Set aside.
3. Steam the clams until they open.
4. Remove and discard top part of the shell.
5. Place remaining shells with clams on baking pan.
6. Top each clam with 1 tsp. Casino Butter mixture, 1 tsp. breadcrumbs and 1 piece of bacon.
7. Bake in pre-heated oven at 400°F for 6-8 minutes (or until bacon is crispy).
8. Sprinkle parsley over clams.
