Ingredients:
4 – 6 fresh Cod Fillets
3 tomatoes, sliced
¾ cup grated mozzarella cheese
¾ cup Italian breadcrumbs
1 lemon, juiced
2 Tbsp parsley, chopped
1 Tbsp olive oil
salt and pepper
Directions:
1. Place cod fillets in shallow baking dish.
2. Top with sliced tomatoes and mozzarella.
3. Combine breadcrumbs, lemon juice, parsley,and olive oil. Add salt and pepper to taste.
4. Spoon mixture over fillets. Bake at 400° F for 15- 20 minutes.
