Crab Cups

Ingredients:
For cups:
12 slices white sandwich bread
1/3 cup butter, melted
Filling:
8 eggs
¼ cup water
1 lb Crabmeat
2 Tbsp olive oil
¼ cup green bell pepper, diced
¼ cup red bell pepper, diced
2 Tbsp onion, diced
8 oz cheddar cheese, shredded
pepper to taste

Directions:
1. Heat oven to 400°F.
2. Prepare "cups" by flattening each bread slice, (a rolling pin or pie plate works well). Make a 1" cut in each corner of bread.
2. Lightly brush both sides of each bread slice with butter.
3. Gently press bread into cups of muffin tin. Overlap cut corners to form a "cup".
4. Bake 8-10 mintues or until lightly browned.
Filling:
1. In medium bowl, beat the eggs and water. Set aside.
2. Heat oil in skillet. Sauté the green pepper, red pepper and onion until tender. Add the egg mixture stirring constantly until eggs are set.
3. Add the Crabmeat, cheese and pepper. Stir gently until cheese is melted.
4. Fill each "cup" 3/4 full with Crabmeat mixture. Serve immediately.

Notes:
For spicer versions:
Add Tabasco sauce
