Ingredients:
1 cup Lobster Meat, chopped
1 cup Monterey Jack cheese, grated
3 oz. cream cheese, softened
¼ cup fresh cilantro, chopped
2 Tbsp orange juice
2 Tbsp grated orange peel
2 Tbsp grated lemon or lime peel
1 cup chopped tomatoes, seeded
¼ cup scallions, chopped
2 Tbsp salsa
vegetable oil
8 8" flour tortillas
Directions:
1. Mix Monterey Jack cheese, cream cheese, cilantro, orange juice and peels. Set aside.
2. Mix Lobster Meat, tomatoes, scallions and salsa.
3. Spread equal amounts of cheese mixture over half of each tortilla.
4. Spoon Lobster Meat mixture over cheese.
5. Fold tortillas in half. Press to seal.
6. Heat oil in skillet. Cook quesadilla 3 mintues each side or until cheese melts and tortillas are golden brown.
Notes:
You can substitue Crab Meat (drained) for the Lobster Meat.
