Ingredients:
1-2 Haddock Fillets
4 Tbsp butter
1 small onion, chopped
1 green bell pepper, chopped
2 cloves of garlic, sliced
1/2 tsp dried basil (I substitute fresh basil when I can get it)
1 large can of diced tomatoes, drained
salt and pepper
2 cups mozzarella, grated
Directions:
1. Preheat oven to 350ºF.
2. Grease 9-inch glass baking dish.
3. Melt butter in large saucepan over medium-high heat.
4. Add onion, bell pepper, garlic and basil and sauté until vegetables are tender.
5. Stir in tomatoes. Season with salt and pepper and cook until saucelike, stirring about 5 minutes.
6. Arrange fish in baking dish and pour sauce over it. Sprinkle with mozzarella.
7. Bake until fish is cooked through, about 25 minutes.
