Ingredients:
1 or 2 18 oz. Haddock Fillets
1 cup fresh breadcrumbs
2 cloves garlic, minced
1 Tbsp fresh herbs, such as rosemary, thyme or parsley, minced
1/2 tsp salt
Freshly ground pepper
1 Tbsp butter
Directions:
1. Preheat oven to 350ºF.
2. Combine the breadcrumbs, garlic, herbs, salt and pepper to taste in a small bowl.
3. Melt the butter is a small skillet over medium-high heat.
4. Add the breadcrumb mixture and cook, 3-4 minutes, until golden brown.
5. Sprinkle breadcrumb mixture evenly over the Haddock and bake for 20 minutes.
