Ingredients:
1 lb Shrimp, uncooked or 12oz Fish (Cod or Haddock)
2 Tbsp butter
2 cloves garlic, minced
1 medium onion, chopped
1 medium green pepper, chopped
1 stalk celery, chopped
1 14½ oz can diced tomatoes
1 tsp dried parsley
½ tsp crushed red pepper
1 bay leaf
1/3 cup cold water
2 tsp cornstarch
Directions:
1. In a large skillet add the butter, garlic, onion, pepper and celery. Cook over medium heat until celery is tender.
2. Stir in the tomatoes, parsley, crushed red pepper and bay leaf. Bring to a boil. Simmer for 15 minutes.
3. In a small bowl combine the water and cornstarch. Slowy add to tomato mixture.
4. Slowly stir in the shrimp or fish to the tomato mixture. Cook for 3-5 minutes or until seafood is done.
4. Remove bay leaf before serving.
Notes:
Serve over rice or pasta.
