Ingredients:
1 large Cod or Haddock fillet
2 Tbsp olive oil
1 medium onion, sliced thin
2 zucchini, sliced thick
1 summer squash, sliced thick
1 large tomato, cut into wedges
3 Tbsp fresh basil, chopped
salt and pepper to taste
Directions:
1. In a large skillet, heat oil over medium heat.
2. Add onion, zucchini and squash. Cook for 5 minutes, stirring frequently.
3. Add tomatoes, basil, salt and pepper. Continue cooking for 10 minutes.
4. Place fillet on top of vegetables. Cover and cook for 8-10 mintues or until fish flakes easily with a fork.
