Ingredients:
2 10 oz Halibut Fillets
1 cup fresh basil leaves
1 clove garlic
2 Tbsp parmesan cheese, grated
¼ tsp pepper
¼ tsp salt
¼ cup pine nuts
1/3 cup plus 2 Tbsp extra virgin olive oil
Directions:
1. In a food processor combine basil, garlic, parmesan cheese, salt, pepper, and pine nuts. Blend until smooth.
2. At slow speed add 1/3 cup olive oil until well blended. Set aside in a bowl at room temperature.
3. Brush both sides of fillets with remaining olive oil.
4. Grill over medium heat about 5 minutes each side.
5. Transfer fillets to individual plates and spoon pesto mixture over each while hot.
