Ingredients:
16 oz Smoked Salmon
1 large cucumber
8 oz cream cheese, softened
¼ cup scallions, finely chopped
2 Tbsp Dijon mustard
salt and pepper to taste
Directions:
1. Mix cream cheese, scallions, mustard, salt and pepper. Spread over Smoked Salmon.
2. Cut cucumber lengthwise into quarters.
3. Wrap each cucumber quarter with covered smoked salmon.
4. Cut into bite size pieces.
Notes:
For a spicier version, omit mustard and add ¼ tsp wasabi paste.
