Lobster Pastry Puffs in Creamy White Sauce

Lobster Pastry Puffs in Creamy White SauceIngredients:
11.3 oz tub Gorton's Lobster Meat, drained
3 Tbsp butter
2 Tbsp onion, finely chopped
2 Tbsp flour
1/3 cup milk
½ cup heavy cream
1 Tbsp scallions, chopped
½ cup dry white wine
2 Tbsp fresh parsley, chopped
salt and pepper to taste
1 package pastry shells, prepared according to package directions

Directions:
1. In a small saucepan melt butter. Add onion and cook until tender. Stir in flour. Cook, stirring constantly until mixture is bubbly.
2. Slowly stir in milk and cream. Stir constantly while bringing to a boil.
3. Remove from heat. Add scallions, wine and Lobster Meat.
4. Fill shells with mixture. Sprinkle with parsley and serve.

Notes:
Gorton's Crab meat can be substituted for the Lobster meat.
