Ingredients:
2 Rock Lobster Tails
1-1/4 cup fresh basil, chopped and packed
1/3 cup chicken stock or water
2 Tbsp pine nuts, roasted
2 Tbsp Parmesean cheese
3 Tbsp olive oil
1 tsp garlic, crushed
Directions:
1. In food processor, pureè basil, stock, pine nuts, cheese, oil and garlic until smooth.
2. Pour portions of the sauce onto plates.
3. Place cooked lobster tail onto the plate, cut into slices and serve.
