Ingredients:
1 lb. Gorton's Maine Lobster Meat
2 Tbsp canola oil
1 Tbsp fresh garlic, chopped
¾ cup tomatoes, chopped
¾ cup mushrooms, sliced
2 Tbsp scallions, chopped
¼ cup white wine
1 tsp lemon juice
1 Tbsp butter
¼ cup parmesan cheese
¼ Tbsp parsley
½ pound Linguini
salt and pepper to taste
Directions:
1. Cook pasta according to package directions.
2. In a hot skillet heat the canola oil.
3. Add the garlic and lightly cook until tender and slightly browned, about 30 seconds.
4. Add the lobster tails, mushrooms, tomatoes, wine, lemon juice, scallions and butter.
5. Heat through about 5 –7 minutes.
6. Add cooked pasta to the pan and toss well.
7. Transfer to plates.
8. Bring lobster to the top and sprinkle with parmesan and parsley.
