Ingredients:
18 oz Cod or Haddock Fillet
2 Tbsp butter, melted
1 clove garlic, minced
salt and pepper to taste
1 onion, sliced
1 green pepper, sliced
1 red pepper, sliced
1 tomato, sliced
1 lemon
Directions:
1. Heat oven to 350°F.
2. Spray baking dish with cooking spray.
3. Place fillet in baking dish (skin side down).
4. Mix butter and garlic together. Spread evenly over fillet.
5. Season with salt and pepper.
6. Layer peppers, onions and tomatoes over fillet.
7. Drizzle with lemon juice.
8. Bake for 20 minutes or until fish flakes easily with a fork.
