Ingredients:
2 lbs cleaned Mussels
2 28 oz cans of diced tomatoes
3 cloves garlic, chopped
1 medium onion, chopped
1/2 tsp thyme, dried
1 tsp parsley, dried
hot sauce, if desired
Pasta, cooked
Directions:
1. Place all ingredients in a 2 quart pot.
2. Cover and cook over medium heat until the shells open.
3. Once the shells have opened, uncover and cook an additional 5-10 minutes.
Serve over cooked pasta.
