Mediterranean Halibut by Chef Bill

Ingredients:
2 10 oz Halibut Fillets
2 Tbsp olive oil
½ Tbsp fresh garlic, minced
11.5 oz can diced tomatoes
¼ cup white wine
1 Tbsp tomato paste
¼ cup Kalamata olives, whole,pitted
3 Tbsp oregano, dried
1 tsp salt
1 tsp pepper
3 Tbsp basil, dried
2 Tbsp parmesan cheese

Directions:
1. Heat oil in sauce pan over medium-high heat. Add garlic and sauté garlic for 1 minute.
2. Add diced tomatoes, white wine, tomato paste, olives, oregano, salt and pepper.
3. Simmer for 10 minutes then add the basil and parmesan cheese.
4. Preheat oven to 425ºF.
5. Place fish on greased sheet pan.
6. Spoon mixture over the top of fish and bake 12-15 minutes or until fish is cooked through.
