Ingredients:
1 lb Mussels, thawed and shucked
1 large can crushed tomatoes
2 Tbsp fresh basil, chopped
¼ cup fresh Parmesan cheese
1 clove garlic, minced
salt and pepper to taste
1 baguette, sliced (1/3" thick)
olive oil
Directions:
1. Toss all ingredients together, except the baguette slices and oil.
2. Brush the top of each baguette slice with olive oil.
3. Arrange mussel mixture over baguette slices.
4. Bake at 450°F for 15 mintues until bread is brown and mixture is heated through.
