Ingredients:
2 lbs Mussels
¼ cup olive oil
1 small onion, chopped
2 garlic cloves, chopped
1 tsp red pepper flakes
1 small can chopped tomatoes
1 tsp fresh oregano
salt to taste
½ cup white wine
½ cup chicken broth
2 Tbsp fresh parsley, chopped
1 Tbsp lemon juice
Directions:
1. Heat oil in a large skillet. Cook onion and garlic 2-3 minutes.
2. Add red pepper, tomatoes, oregano and salt. Heat 2-3 mintues.
3. Add mussels and wine. Simmer for 2 mintues.
4. Add broth, parsley and lemon juice. Continue simmering for 2-3 mintues.
5. Serve immediately over your favorite pasta.
