Ingredients:
2 lbs Mussels, thawed
1 green bell pepper, diced
1 red bell pepper, diced
¼ cup onion, diced
¼ cup red wine vinegar
1/3 cup olive oil
1 Tbsp parsley, chopped
salt and pepper to taste
Directions:
1. Combine all ingredients except the mussels. Mix well.
2. Add the mussels to a large pot of boiling water. Cook about 4 minutes. Drain mussles and place in bowl. Pour vinaigrette over mussels.
Serve.
