Ingredients:
½ pound Mahi Mahi Fillet
salt and pepper
Glaze:
¾ cup orange juice
¼ cup Coco Lopez
¼ cup pineapple juice
¼ of a large Pineapple, skinned and diced
1 orange, peeled and diced
1 tsp corn starch
½ cup warm water
Directions:
1. In a skillet heat the orange juice, pineapple juice and coco lopez.
2. Add pineapple and orange pieces and heat for 2 minutes.
3. Blend together the corn starch and warm water.
4. Slowly add the corn starch mixture to the fruit mix and stir until thickened.
5. Season the Mahi fillet with salt and pepper. Grill for about 5 minutes on each side or until cooked through.
6. Top the fillet with the glaze. Serve hot.
