Ingredients:
4 Cod Fillets
4 Tbsp butter, softened
¼ tsp salt
¼ tsp pepper
2 tsp orange juice
1 tsp grated orange zest
2 tsp lemon juice
fresh parsley
2 Tbsp olive oil
Directions:
1. In a medium bowl blend together butter, salt, pepper, orange juice, orange zest, and lemon juice.
2. Place mixture onto a piece of plastic wrap, form into a 2 in. cylinder and twist ends to seal tightly.
3. Freeze orange butter until firm, about 30 minutes.
4. Brush fillets with olive oil and place on a preheated grill (medium heat).
5. Grill 5 minutes on each side until firm.
6. Serve at once with a thick slice of orange butter. Garnish with parsley.
