Ingredients:
2 Rainbow Trout Fillets
1 small white onion, julienned
1 medium red pepper, julienned
2 poblano chile peppers, julienned
4 cloves garlic, minced
2 Tbsp olive oil
1 Tbsp butter
2 tsp jerk seasoning
2 Tbsp cilantro, chopped
2 orange slices, unpeeled
2 12"x12" sheets of heavy duty aluminum foil
or 2 12"x12" banana leaves
Directions:
1. Sautè onion, peppers and garlic in oil and butter until tender.
2. Arrange each trout fillet on a foil sheet, skin-side down.
3. Season each fillet with 1 tsp jerk seasoning. Cover with 1/2 onion mixture and 1 Tbsp cilantro. Top each with slice of orange.
4. Wrap foil around fillet and seal ends.
5. Grill over medium heat (or Bake at 375°) for 15-20 minutes.
Notes:
May be prepared ahead and refrigerated up to 4 hours.
