Oyster Stuffed Good Luck Cabbage

Oyster Stuffed Good Luck CabbageIngredients:
2 8 oz tubs of Gorton's Fresh Oysters, (reserve liquid)
1 Savory (curly) cabbage
1 stick butter
3 stalks of celery, finely diced
1 onion, finely diced
1 shallot, finely diced
2 cups seasoned breadcrumbs
¼ tsp dried thyme
½ tsp Bell Seasoning
3 Tbsp Romano cheese, grated
salt and pepper to taste

Directions:
1. Boil whole cabbage for 45 mintues. Remove from heat. Leave in water additional 15 minutes. Remove from water and set aside to cool. (can be done 1 day ahead if refrigerated)
2. In a large skillet, melt the butter. Add celery, onion, and shallot. Cook until tender.
3. Remove from heat. Add the breadcrumbs, thyme, Bell seasoning, cheese, salt and pepper.
Gently add Oysters and liquid. If mixture is too dry, add water. If it's too wet, add more breadcrumbs.
4. Place cabbage in large casserole dish. Undo leaves carefully (unfold like a flower).
5. Stuff cabbage with Oyster mixture. (Leave center whole and outside leaves). Fold outside leaves over mixture.
6. Cover with foil. Bake for 1 hour at 350°F.

Notes:
Traditional New Year Day side dish will bring "Good Luck" to all that indulge!
