Ingredients:
2 10 oz Salmon Fillets
Sauce:
1/3 cup plain yogurt
4 tsp fresh ginger, minced
2 cloves garlic, minced
2 Tbsp lime juice
1 Tbsp honey
1/8 tsp salt
ground pepper, to taste
1/2 cup fresh mint, chopped
1 Tbsp scallions, chopped
Directions:
1. In a small bowl, whisk yogurt, ginger, garlic, lime juice, honey, salt and pepper until well blended.
2. Spoon 1 Tbsp sauce over each salmon fillet. Cover and refrigerate remaining sauce for 20-30 minutes.
3. Grill Salmon fillets over medium-high heat for 4-6 minutes each side.
4. Add mint and scallions to refrigerated sauce and serve with grilled salmon fillets.
