Ingredients:
1 lb Bay Scallops, blanched
2 Tbsp onions or shallots, minced
1 tsp garlic, minced
1 Tbsp fresh cilantro, chopped
1/2 tsp ground cumin
1 small fresh tomato, chopped
2 Tbsp lime juice
3 Tbsp olive oil
Directions:
1. Toss all ingredients mixing well.
Serve immediately or refrigerate.
