Ingredients:
1 lb Bay Scallops
1/4 cup olive oil
1/2 lb slab bacon, cut into 1/4 inch cubes (lardons)
3 cups heavy cream
2 Tbsp fresh thyme
salt and pepper, to taste
8 oz Angel Hair Pasta
Directions:
1. Cook pasta according to package directions.
2. Sauté bacon in olive oil.
3. Remove bacon and pour off all but 1/4 cup fat.
4. Add scallops to pan and sauté for 2-3 minutes.
5. Add cream, bacon, thyme, salt and pepper to pan. Heat for 1 minute.
6. Serve over pasta.
