Ingredients:
1 lb Bay Scallops
4 Tbsp butter
1 medium onion, chopped
1/2 cup mushrooms, sliced
1/4 cup dry white wine
1/2 cup creamy caesar dressing
1 1/2 cups cheese, (Gruyere or Swiss)
Directions:
1. Over medium heat, sauté scallops in 2 Tbsp of the butter. Remove scallops from skillet and set aside.
2. Add the remaining butter to the skillet. Over medium heat, sauté the onion, and mushrooms for about 4 minutes.
3. Add wine, dressing, cheese and scallops and heat for 1 minute.
4. Spoon mixture into a lightly greased casserole. Broil 4 inches from heat for 2-4 minutes.
