Ingredients:
2 lb Bay Scallops
1 can condensed cream of mushroom soup
½ cup fresh mushrooms, chopped
¼ cup sherry
½ tsp dried tarragon
½ cup croutons, crushed
½ cup swiss cheese, shredded
Directions:
1. Heat oven to 350°F.
2. Place scallops in baking dish.
3. In a medium saucepan, combine soup, mushrooms, sherry and tarragon. Heat until simmering. Pour over scallops.
4. Sprinkle with croutons and cheese.
5. Bake for 20 minutes or until scallops are opaque.
