Ingredients:
1/2 lb Bay Scallops
1/2 lb shrimp, shelled and deveined
1 Tbsp olive oil, divided
1/3 cup onion, minced
1 clove garlic, minced
1/4 cup dry white wine
1/4 cup fresh parsley leaves
1/4 cup fresh basil
1/4 cup clam juice
Directions:
1. In a saucepan, cook the onion and garlic in 1 Tbsp of the olive oil until the onion is translucent.
2. Add the wine. Simmer until the wine is reduced by half.
3. Add the parsley, basil, and clam juice. Simmer for 1 minute. Add salt and pepper and simmer for 2 minutes.
4. Heat the remaining oil in a non-stick skillet until oil is hot. Sauté the shrimp and scallops for 1-2 minutes or until cooked through.
5. Add the herb sauce to the shrimp and scallops mixute. Heat for 1 minute.
