Ingredients:
½ pound Mahi Mahi Fillet
½ pound large Shrimp, uncooked
salt and pepper
1 Tbsp water
1 Tbsp canola oil
½ tsp garlic, chopped
1 tsp shallots, chopped
¼ cup mushrooms, sliced
1 Tbsp pickled ginger, chopped
3 Tbsp green onions, sliced
¼ cup rice wine vinegar
¼ cup chicken stock
1 Tbsp butter
½ roasted red pepper, cut into strips
½ tsp turmeric
Directions:
1. Season Mahi Mahi with salt and pepper and roast in the oven at 450º F for 8–10 minutes with 1 Tbsp of water.
2. In a heated sauté pan, add the canola oil and heat for 15 seconds.
3. Add garlic, shallots, mushrooms, pickled ginger, green onions and shrimp.
4. Cook until shrimp are pink.
5. Add rice wine vinegar to deglaze the pan.
6. Add chicken stock and simmer for 1 minute.
7. Finally, add the butter, red peppers and turmeric and blend well to make a sauce.
8. Pour the sauce over the roasted Mahi Mahi and serve.
