Ingredients:
1 1/2 cups Gorton's Lobster Meat, or Gorton's Crabmeat, or Gorton's Cooked Shrimp
1/4 cup butter
1 clove garlic, minced
1/4 cup flour
1 cup milk
1/2 cup chicken broth, low salt if desired
1 cup mozzarella cheese, shredded
1 Tbsp scallions, chopped
1/2 tsp dried tarragon
1/4 tsp black pepper
1 Tbsp capers
1/2 cup ricotta cheese
1 cup fresh baby spinach leaves, packed
1/4 cup parmesan cheese grated
8 lasagna noodles, (cooked according to package directions)
Directions:
1. Heat oven to 350°F.
2. Over low heat, melt butter in a medium saucepan. Add garlic and cook until tender. Slowly stir in flour. Cook, stirring constantly until bubbly.
3. Stir in milk and broth. Heat to boiling, stirring constantly.
4. Turn heat to low. Stir in mozzarella cheese, scallions, tarrragon, pepper and capers. Continue stirring until cheese is melted. Remove from heat. Blend in ricotta cheese.
5. Spray casserole dish with non-stick spray. Spread 1/2 cup cheese mixture in greased casserole dish. Top with 2 noodles. Spread 1/3 of remaining cheese mixture over noodles. Layer 1/3 cup of spinach leaves over cheese mixture. Repeat two times.
6. Top final cheese layer with Seafood. Top with last two noodles.
7. Sprinkle parmesan cheese over noodles.
8. Bake uncovered 45 minutes or until bubbly.
Let stand 10-15 minutes before cutting.
Notes:
Add different seafoods such as: Gorton's Sea Scallops cut into bite size pieces or when available, Gorton's Bay Scallops.
