Ingredients:
2 Tilapia fillets
2-3 sweet potatoes, cooked and peeled
1 Tbsp lemon juice
2 Tbsp orange juice
1 Tbsp butter
1 tsp salt
½ tsp ginger, minced
Crust:
4 graham crackers
1 cup roasted nuts (pecans or almonds or peanuts)
3 Tbsp butter, melted
Directions:
1. Mash the sweet potatoes, juices, butter, salt and ginger.
2. Cover the Tilapia fillets evenly with the potato mixture.
3. Grind the graham crackers, nuts and butter.
4. Sprinkle the cracker mixture over the potato mixture.
5. Broil the fillets until golden brown, (5-8 minutes).
