Ingredients:
4 Tilapia fillets
salt and pepper
Vinaigrette:
¼ cup olive oil
¼ cup vinegar
2 Tbsp honey
1 tsp Dijon mustard
Directions:
1. Preheat oven to 350°F. Grease baking dish large enough to hold fillets in a single layer.
2. Season fillets with salt and pepper.
3. In a mixing bowl, whisk ingredients for vinaigrette until well blended.
4. Pour vinaigrette over the fillets, coating evenly.
4. Bake for 20 minutes or until fish is cooked. Fully cooked fish flakes easily with a fork.
Notes:
For Grill Cooking –You will need two sheets of heavy duty aluminum foil. Place two fillets in the center of each sheet. Evenly distribute tomato mixture over fillets. Fold ends of foil sheets to seal and form a pouch. Cook over medium-high heat for approximately 12-15 minutes.
