Ingredients:
2 8oz Rainbow Trout Fillets
flour, as needed
2 Tbsp butter
2 Tbsp vegetable oil
Apple Relish:
1 cup red delicious apples, diced
1/4 cup fresh lime juice
1/2 tsp grated lime zest
1 cup red onion, diced
1 1/4 cups toasted walnuts, chopped
1/2 Tbsp cider vinegar
sugar, to taste
salt and pepper, to taste
Directions:
1. Dredge fillets in flour, shaking off excess.
2. Heat butter and oil in skillet. Sauté fillets until tender (about 3 minutes per side).
3. Top fillets with Apple Relish.
Apple relish:
1. Combine all ingredients. Best when prepared 1 hour in advance.
