Southwestern Crusted Salmon by Chef Bill

Southwestern Crusted Salmon by Chef BillIngredients:
1 lb Atlantic Salmon Fillets
3 Tbsp lime juice
6 dashes of Tabasco
2 Tbsp olive oil
4 Tbsp fresh cilantro, chopped
½ cup Pistachios, shelled

Directions:
1. Combine lime juice, Tabasco, olive oil and cilantro.
2. Pour over salmon and let sit for 15- 30 minutes.
3. In the meantime place pistachios in a food processor and chop into fine pieces.
4. Roll salmon in pistachio bits.
5. Broil for 10 minutes (5 minutes on each side).
6. Garnish with lemon or lime slices and serve.
