Preparation & Handling
Fresh sea scallops can be stored in your refrigerator safely for up to three days and can be frozen for up to four months provided your freezer reaches a temperature well below zero. Fresh sea scallops can be sautéed, baked, broiled, or fried. When sautéing or frying scallops, pat them dry. Wait until your pan is hot so that when the scallops are added, they will sizzle. This will protect their delicate meat. Sea scallops cook quickly, changing from a pearly translucent color to pure white. Try sautéing them with olive oil, lemon, and garlic for a delicious and quick entrée. Search our database for delicious sea scallop recipes.
Item Details and Quality
For generations, some of the best sea scallops have been harvested in the shallow waters off Georges Bank, including the ones you’ll receive from Gorton’s Fresh Seafood. Sea scallop meats are creamy white, and have a sweet “nut-like” flavor, with a fragrance like the freshening sea. The large sea scallops you’ll receive are considered “dry” scallops because there is never any moisture added during processing. Since speed is of the essence when preserving scallops, fresh scallops are shucked by hand at sea, and are immediately cleaned and packed upon landing. They are then stored fresh – never frozen - in plastic bags to retain their quality and taste. Your sea scallops are all natural, and have no additives or preservatives. Sea scallops are so tender that they cook quickly, and should always be patted dry before being added to a hot pan. Search our database for delicious sea scallop recipes.
